Tofu "EGG" Lemongrass Ginger Fried Rice

This is another one of our all time favorite preparations of tofu! You can use this tofu “egg” in scrambles, chilaquiles, burritos, breakfast sandwiches, breakfast tacos, and more! In this recipe we'll show you how to turn tofu into a vegan egg substitute to add to your vegan fried rice any time you want a quick, easy, and delicious rice pairing for a meal.


  • 1 package of firm pressed tofu
  • 1⁄4 cup of olive oil
  • 1⁄4 cup of apple cider vinegar
  • 1/2 teaspoon of salt
  • 1 dash of turmeric (for color)
  • 4 cups of brown rice (ideally cooked the day before)
  • 5 tablespoons of coconut oil
  • 4 tablespoons of Bragg's liquid aminos (or soy sauce as a replacement)
  • 1/2 teaspoon of sesame oil
  • 1 tablespoon of diced garlic
  • 1 tablespoon of diced ginger
  • 1 tablespoon of finely chopped fresh lemongrass
  • 1/2 cup of cubed carrots
  • 1/2 cup of peas, chopped green beens, or both
  • 1/2 cup of chopped broccoli
  • 3 tablespoons of chopped green onions
  • 2 tablespoons of chopped cilantro
  • 1 tablespoon of toasted sesame seeds (for garnish)
  • 1 lime (we love to squeeze lime juice over the top!)


Tofu "Egg"

  1. Preheat oven to 450°
  2. Dry tofu on a towel and chop to desirable size (small cubes works), or squeeze into crumbles
  3. Mix olive oil, apple cider vinegar, salt and turmeric in a glass baking dish
  4. Put the tofu in the mixture and coat both sides
  5. Bake for 10 minutes on one side, then flip and bake for another 10 minutes
  6. Set aside once finished.

Fried Rice

  1. Heat wok or similar large frying pan on high with coconut oil
  2. Add ginger, garlic, and lemongrass and fry for 1 minute or until it gets fragrant
  3. Add veggies and sauté for 3-4 minutes or until cooked to your liking
  4. Add sesame oil and then rice with the liquid aminos (or soy sauce)
  5. Fry for another 4-5 minutes
  6. Right before you are ready finish, add chopped green onions, cilantro, and salt to taste
  7. Finish with a squeeze of lime and sesame seeds
  8. Feel free to top with remaining cilantro and green onions!
