Cheesy Garlic & Red Pepper Polenta Fries

Time 30 Minutes  |  Yields 2 Servings

This week I was inspired to create a vegan cheese fries recipe after messing around in the kitchen with a friend and stumbling into something that we were both drooling over. After tinkering with a few versions, the winner was a spicy, cheesy, garlic vegan polenta fry that we think you'll love. Try it out for yourself and let us know what you think!

  • 2 cups of ground polenta
  • 1 tablespoon of coconut milk
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of garlic powder
  • 2 tablespoons of nutritional yeast (learn about it here)
  • 1 tablespoon of olive oil
  • 1/2 teaspoon of red pepper flakes

  1. Add 4 cups of water and your polenta to a pot, and stir on medium heat until soft
  2. Mix in all other ingredients
  3. Line a baking sheet with parchment paper, pour polenta on pan to the thickness that you want your fries to be
  4. Cool for 2 hours in fridge, and cut cooled polenta into fry-sized strips
  5. Spread out the polenta strips on the parchment paper and bake for 20 minutes at 400 or until brown and crispy
  6. Let cool and enjoy!
